Best sandwich ever!



Normally I’m not an open-face sandwich kind of girl. Except for this one. I could eat this sandwich every day and be deliriously content.

It’s not the kind of sandwich that I can get at a deli or fancy schmancy sandwich counter.

It’s not complicated with gourmet ingredients or a laundry list of meats and cheeses.

It’s simple. And fresh. And eye-rolling delicious.

Here it is.

Are you ready? You may want to sit down for this.

  1. Toast a slice of bread.
  2. Smear toast with mayonnaise (I use Vegennaise.)
  3. Place a layer of fresh basil leaves.
  4. Add a layer of ripe tomato slices.
  5. Sprinkle with sea salt.

There. Can you feel the wind in your hair? The beat of your heart thundering in your ears?

It’s a rush, I know!

It’s just that good.

  1. Don’t like basil so I use lettuce and I prefer Kraft’s dressing mayo instead of the “real” stuff. Didn’t get nearly enough tomatoes this year with the wet. They rotted 😦

    Put a little mozz on top, melt it under the broiler.


    Hopefully, we’ll have more tomatoes next year. The one’s from the US in the winter are “meh” at best. Ontario greenhouse are an “ok” replacement but not until late winter. Nothing like fresh from the garden.
