I’m on a desperately-grasp-the-last-days-of-Summer kick. Did I mention that school starts in—gulp—two days? And I already have homework. How’s that possible? NO! I’m not ready! I’m still on vacation!
In order to prolong that vacationy feeling, I ask you, what says Summer more than avocados? Hmmmm? Even better: Avocados and margaritas. Oh, yeah. Life is good, my friends.
Here’s a super quick and easy recipe for avocado lime soup that is rich, creamy, and fresh. It has the perfect blend of avocados and margarita (also known as lime.) And it’s super healthy for you. Not bad, huh?
Bust out your ingredients: The base is, of course, avocados and limes. Also key are cucumbers and celery. And because I’m trying to use what I’ve got in the garden I’m adding squash, tomatoes and fresh cilantro. Chop coarsely and throw everything into your food processor or blender, whichever will give you the finest puree.
Add your seasonings and blend. Add water starting with one cup and slowly add more until you get your desired “soupy” consistency. There, you’re done!
Garnish with some sour cream, chives and chopped tomatoes.
By the way, this is a rich soup and although I dished mine out in a bowl (’cause it was my entire meal) this soup is also perfect served in tiny cups or even shot glasses if you’re having a party or BBQ. It’s perfect at room temperature and when garnished looks beautiful and festive. And the creaminess gives you a real feeling of luxe. You’re the only one who needs to know how healthy it is, too. Win. Win. Win.
Avocado Lime Soup
serves 4-8 depending on serving size
1 medium to large cucumber
1 stalk of celery
1 ripe tomato
1 small squash or zucchini
1 small bunch of fresh cilantro
2 cloves of garlic
Juice of 2 limes
2t ground cumin
1t ground coriander
1/2 celery salt
pinch of sea salt (to taste)
1-1.5 cups water
sour cream (I prefer cashew cream or vegan, you can use whatever you want—even plain yogurt would work well)
1. Roughly chop all ingredients and throw into food processor or blender.
2. Add seasonings and blend.
3. Add water until you reach desired consistency.
4. Dish and garnish.
