Chocolate chip banana oat bran pancakes



Happy Veteran’s Day!

Not only is honoring our nation’s military veterans an important focus today (actually, it’s important every day of the year), but as a bonus it’s a federal holiday, which means we get the day off. Yay! It’s an occasion to sleep late, relax over the paper, eat a good hearty breakfast and go see the local hometown parade. ‘Tis a good day, folks—a good day.

In celebration of this terrific holiday let’s make some chocolate chip banana oat bran pancakes!

You take a basic oat bran pancake recipe …


… go ahead and pour the plain batter on the griddle …


… then add your sinful toppings. We chose chocolate chips and bananas. Mmm. I’m getting another craving for that choco-nana mix. Urrm. Good.




Eat up with your favorite syrup. Yum–eee!

Adapted from Lauren’s Oat Bran Pancakes on

3T canola oil
1/2c sugar
2T honey
2 eggs
1c skim milk
1/2c wheat flour
1/2c white flour
1/2t baking soda
1/2 t baking powder
1/2t salt
1t cinnamon
1c oat bran
1 banana, sliced
1/4-1/2c chocolate chips

  1. Whisk together the wet ingredients.
  2. Add all dry ingredients except oat bran and mix well.
  3. Stir in oat bran.
  4. Fry on griddle at medium heat in a little oil or cooking spray.
  5. Add chocolate chips and banana.
  6. Flip and cook for another minute.
  7. Plate.
